Veg Dum Biryani

Veg Dum Biryani



Ingredients
Rice 2cups soaked in water
Vegetables( 2carrot, 1potato,3-4 baby corn, beans, cauliflower, peas)
2 onion chopped
1cup curd
2 tbsp green chilli ginger garlic paste ( or as spicy u like)
1 tbsp coriander  powder
1 tbsp garam masala
1/2 tbsp haldi
Salt to taste
3-4 green chillies
mint n coriander leaves
pinch of kesar soaked in milk.
Whole garam masala( cinnamon , cardamom , cloves, black pepper, star aniece )
5  tbsp ghee
In a pot keep water to boil.. Add whole garam masala n salt .
When the water start boiling add rice n cook till 75% done..  now drain the water.

In another pan heat ghee n fry cashews ..keep aside... now add thinly sliced onion in ghee fry till light golden brown. Take out little onion for later use..Now add ginger garlic paste, chilli paste n roast till raw smell goes. Then add all veggies fry for a minute n add all dry masala n fry.. Once the oil get separate add curd  mint , coriander leaves n mix .. Let it cook till u r veggies get half cooked..remove from heat and keep aside..

For layering
Take a wok(non stick/heavy bottom ) ... add little ghee...spread some veggies Put one layer of rice on it sprinkle coriander n mint leaves,little ghee, saffron milk n fried onion n cashews .. Repeat this procedure twice Cook covered on low heat . While serving  add little fried onion n cashew..... Serve with veg Raita.
