Satorya/ Mawa roti
Ingredients:
For Dough
3/4 cup Maida
1/4 cup aata/rava
1 tbsp ghee
Pinch of salt
water to knead the dough
For stuffing
1 cup roasted mawa (I hv used homemade mawa.. which is brown in colour bcoz cooked on low heat)
3/4 cup pd sugar(u can add more if u like little bit sweeter)
Otger ingredients
2 tbsp rice flour to roll satori
Ghee to shallow fry or deep fry satorya
Method:
Mix rava/aata, maida and salt together. Heat ghee and add hot ghee into this mixture. Add water and knead a medium consistency dough neither stiff nor soft. Rest it for 30 minutes.
Stuffing
Heat a pan roast mawa nicely (I rosted till brown colour) add sugar. ....stir continuously. .. cook mixture until it starts leaving sides of the pan...
Turn off the heat ..let cools it completely. ..Or you can roast mawa then let it cool at room temperature after that add sugar (sugar should be powdered)
Making
Divide the dough and stuffing into 10 equal portions. Take one dough portion and roll it into a small disc. Put the stuffing at the center. Join all the edges and seal.(just like we do for paratha)
Take very little dry rice flour and roll the satori/roti little thick... Heat pan. Add some ghee and roast satori over low-medium heat until both sides get light brown spots.
Do same procedure for all portions
