Khaman

Khaman/ खमण

Ingredients
1 cup basan
1 tbsp semolina/ rawa
2 tbsp sugar
1/4 tsp turmeric pd
1 tsp  lemon juice/citric acid
1 pkt Eno fruit salt or 1/2 tsp baking soda
2-3 tsp oil.

Method
             
Take basan into big bowl add rawa salt sugar and citric acid mix it nicely now add water n prepare batter of pouring constancy.               
In big kadhai boil water and put a greased thali on a ring  ....    Now  add 1/4 tsp turmeric pd and 2-3 tsp oil to the batter mix it well .... add baking soda mix it  again n immediately pour it into greased thali.  Cook covered on  high flame for 10-15 min or till done...  (check with knife if it is clear means dhokla done).... Let it cool..   cut into pieces and temper with some mustard seeds , cumin seeds , Seasome seeds,  pinch of  hing green chilli (chopped) n currypatta ... Garnish with coriander leaves ..  serve with chutny ....

Or u can skip addition of sugar directly to the batter and in place of that sprinkle sugar syrup (2 tsp sugar in 6tsp water) after dhokla done... n then temper Dhokla.
