Puran Poli / Sweet chana dal stuffed paratha




It is a very famous delicious dish from Maharastrian cuisine. In this chana dal is cooked with sugar/jaggery flavoured with green cardamom , nutmeg and saffron (optional ). This flavoured mixture is stuffed in paratha dough and rolled with rolling pin. pan fried and eaten with clarified butter.. In few cities of Maharashtra it is eaten with milk .


My style to make puran poli (mamta Joshi)

ingredients
for puran
Chana Dal 250 grams
Sugar 250 grams
Jaggery (Gud) 100 grms
Cardamom Powder+ nutmeg powder  1/4 tsp each
Saffron strands few (optional)
clarified butter (Ghee) for frying

for dough
fine wheat flour 1/2 cup
maida 1/2 cup (optional you can take only  wheat fluore too)
Oil for moyan 3-4 tablespoon
rice floure for dusting


#METHOD
#For Puran
1. Wash and soak Chana Dal for an hours
Add sufficient (less than double) water and cook Dal n nutmeg pd in pressure cooker till 2 to 3 whistles (Dal must cook properly and should be soft)

After pressure subsides mash dal with pavbhaji masher(you can grind too but it is very lengthy n risky procedure so i avoid that and use masher only).  Add Sugar and Gud to Dal..  mix and cook (in cooker only..  keep stirring in between



Cook Dal till semisolid ( bound) consistency ...  Sieve through puran  machine.



Add cardamom powder n  saffron strands and mix well ... Allow it to cool completely and make small balls

#For #Dough
 Take aata , Maida, pinch of salt n some oil (for Moyen) n knead soft dough..keep it aside for some time and knead again with adding some more oil.



 Now take small ball of Dough..roll it little with hand and put Puran  ball into it . Seal it from all sides. Dust it with some rice flour / Maida and roll thin poli. On a warm skillet pan fry it on low heat  with some ghee from both the sides till golden brown.
Tastes awesome when serve hot with little more ghee.
