Sabj-E-Bahar /Masala Tawa Bhaji

when a party at home and you do not know guests' like n dislike about food then there is a big question 'what to cook in main course?'..yaaa paneer is one n other Here is my no fail simply delicious masala vegetable recipe which is always liked by everyone .


vegetables
7-8 Baby potatoes
Few florets of cauliflower
5-6 Small /Baby Brinjals
Few French beans cut into pieces of 2 inches length
8-10 small/baby lady finger
1 big Bitter gourd  cut into small rounds (1 inch) pieces
2-3 button onion / 1 onion cut into big pieces
1 tsp Anardana/chat masala
1/4 tsp kasmiri red chilly powder
1 tsp coriander-cumin powder
oil to deep fry
For Gravy
1 large sized onion grated
2 large sized tomatoes chopped.
1 inch ginger grated
3-4 cloves
1-2 green cardamom
1/2 tsp ginger garlic paste.
1/4 tsp turmeric powder
1 tsp kashmiri red chilly powder
1/2 tsp chat masala(adjust according to taste)
1/2 tsp kitchen king masala/garam masala
2 tablespoon curd
2 tbsp cream
1/4 tsp  kasuri methi
 2 tablespoons Butter/ghee
some more butter required for frying vegetables while serving.      
Method
  
Mix chat masala, red chilly powder and cumin-coriander powder in a bowl.
Scrape bitter gourd cut into pieces, remove seeds and keep in salty water(1 cup water+1/2 tsp salt)

Peel potatoes and keep in salty water for 10-15 mins
Slit baby lady finger and baby brinjal criss cross but base shoud be intact .  Get all vegetables ready


deep fry all vegetables in hot oil sprinkle mixture of chat masala , cumin-coriander powder and red chilly powder and keep aside.



for gravy
make a puree of chopped timatoes along with cardamom, ginger and cloves.
 Heat ghee in a pan add ginger garlic paste and grated onion.
sauté for few minuts (till raw aroma goes) add turmeric powder , red chilly powder , kitchen king masala, chat masala and mix well
add tomato puree.



Cook till mixture starts leaving oil then add curd . saute for a minut or two then add cream ,  kasuri methi...mix it add little water.. cook for a while and your masala for vegetables is ready.



arrearage all fried vegetables on the edges of an iron skillet
when you have to serve ..just add 1/2 teaspoon of butter in the middle of skillet add one or two teaspoon masala (gravy) mix and add veggies of choice of your guests. cook for a while in masala and serve..
